Kenya – Kichuri

Kenya has a long history with Kuria tribe. It’s the most dispersed tribe all over the country. Kuria people are likely to resemble with Maasai people in mode of eating especially meat. Today we will prepare Kichuri a goat intestine stew cooked along with the greens inside.

Nigeria – Abacha and Ugba

Abacha is prepared from casava. it is cooked well first, then grated and then sun dried. Abacha is a meal prepared and valued by the Nigerians, mainly by those from the eastern part of Nigeria.

Cameroon – Ndole

Bitter leave is like any other green vegetable, but it is very bitter when not washed properly. Bitter leave has been said to be a medicinal plant back then. Our four-fathers used it to reduce high sugar level with patients suffering from diabetes. Bitter leave is said to grow both in the dry season and raining season. These are said to be the seasons in Cameroon.

Ifishashi is a zambian dish, that is prepared from green plant leaves and it can be mixed with most of the foods in Zambia.

Chad – Esh

Esh cuisine is among the northern Arab cuisines made from boiled millet flour. Chad is located in the north-central of African Continent bordering Libya in the north, Niger in the west, Cameroon on the west-southern part and Central African Republic to the south, as well as Sudan to it’s east.
