Aluvi Baokibba is also known as cassava coconut cake. Cassava is basically a root vegetable that tastes like potatoes. This is the most delicious and tempting dessert in the Maldives. This cake tastes so delicious. This is the specialty of Maldives. The texture of this cake is so soft that it melts in your mouth and the flavor is outstanding. The coconut in it adds so fresh flavor to it. Coconut is the main ingredient of this dessert. This is one of the most popular desserts of the Maldives. This cake is not so spongy. It is a flat cake which is so soft. The coconut in the cake adds some raw texture to the cake. People like to eat this as a snack or as a breakfast. You can serve this to any occasion to impress the guests. When you bite this appetizing cake it melts in your mouth. This is no so sweet, it has the perfect amount of sweetness in it. You can have this with honey, sugar glaze, chocolate, tea, or coffee. This is available at every restaurant in the Maldives. This cake is also available at street vendors. Some people like to eat it hot in winter. You can serve this hot or cold whatever you like. This is the most unique and yummy cake of the Maldives. The coconut adds some island flavor to the cake. The important part of the dishes all the ingredients of the dish have to be mixed very well otherwise the cake batter will have curdles in it and that will taste not good and become hard. If you want to have the perfect cassava coconut cake then mix all the ingredients very well.
The texture of the coconut is juicy so if you add coconut water to the cake. It tastes so much better and unique. Almost all the people love this cake for sure. You can also top this with some whipped creme or some fruits but the original recipe does not contain all these things. The color of the cake is bright yellow on the inside and light brown on the outside.

You can also replace coconut with coconut water, cream, oil, etc. But now coconut is not the main ingredient of the dish but there are a few recipes in which coconut is the main ingredient like Aluvi Baokibba, Maroshi, etc.

Ingredients
- 2 cups Cassava (shredded)
- 1 cup coconut (shredded)
- 1/2cup flour
- 11/2 cup sugar (powdered)
- 5 tbsp coconut milk
- 1 tsp baking powder
- 1 pinch baking soda
- 5 eggs
- 1tsp vanilla extract
Cooking
Take a bowl and add coconut, coconut milk, eggs, and vanilla extract and mix them very well. Now take a blender and add the mixture to the blender and blend for 7 to 10 minutes. Now take another bowl and add the flour, baking soda, baking powder, sugar, and cassava in it and mix well.
Now combine the dry ingredients with the blended mixture and mix very well. Make sure that it does not have any lumps in it. Now take a baking pan and place butter paper on it and then add the cake batter in it and bake for 15 minutes. Serve with honey or whatever you like.
