Pakistan – Traditional Shahi Tukray (Sweet Creamy Dessert)

Introduction

Shahi tukray is a creamy bread pudding. This is a mouth watering dessert. No occasion is complete without a bowl of this goodness. The texture is smooth, the aroma is royal and the taste is appetizing. To make this yummy dish you should prepare a smooth pudding and then deep fry the bread so it become crispy and then add the bread pieces in the pudding to give it more texture and flavor. When the bread is soaked in the pudding it become soft from outside and crispy from outside and this combination people love.

Which people have some medical issues they use small amount of sugar and slices of brown bread. This dish is garnished by using different types of nuts like almond, pistachios, cashews, walnuts, raisins and silver foil. Some people add flavor to their pudding to change some flavor like strawberry, mango, banana, vanilla etc. The way of cooking this dessert is little different.

Ingredients

  • Milk 1 kg
  • sugar 1 cup
  • green cardamom 5
  • yellow food colour
  • vanilla essence ( optional)
  • water 1/2 cup
  • corn flour 2 tbsp
  • bread slices 10
  • heavy cream 6 tbsp
  • condense milk 1/2 cup

For garnish

  • almond 2tbsp (chopped)
  • pistachios 2 tbsp (chopped)
  • silver foil
  • raisins 2tbsp
  • cashew 2 tbsp chopped)
  • walnuts 2 tbsp (chopped)

Method of cooking

Step 1

Take a large cooking pot and add milk, sugar, cardamom and boil for 15 minutes. Now add vanilla essence, heavy cream and condense milk turn the flame low and let it cook for about 1 hour and keep stirring otherwise it will burn.

Step 2

Now take a deep cooking pot and add 3 cups of oil and add the bread slices and fry until golden brown.

Step 3

When the milk is thickened put this is a dish and place the pieces of bread on the top of the pudding and keep it in the freezer for 30 minutes and then garnish it with almonds, walnuts etc.
