Pakistan – Traditional Khichri

Introduction
Khichri is another name of goodness.It prepared by adding rice,moong daal,ghee,salt,cloves,cumin and many other ingredients. The name of it is derived from sanskrit word khicca which means a dish of rice. You can eat khichri as lunch or dinner. Khichri is served with cucumber, tomatoes, lettuce, onions and raita (sauce). Khichri is full of carbohydrates and protein. Some people eat khichri when they are sick. You can eat khichri when your stomach is upset. It is considered one of the first solid food that babies eat. It taste is very unique and simple. You can easily find this in dhaba (restaurant). This is very famous in hyderabad.hyderabadi markets are littered with this yummy dish. Here are the types of khichri:
- Qeema khichri
- Chicken khichri
- Vegetable khichri
- Moong daal khichri
- Oats khichri
- Sabudana khichri
- Hyderabadi khichri
- Masala khichri
Ingredients
- Rice 2 cups
- Moong daal (yellow lentils) 1 cup
- Ghee (oil) 3 big spoons
- Cumin 1 teaspoon
- Bay leaves 3
- Cloves 5
- Ginger powder 1 big spoon
- Garlic powder 1 big spoon
- Green chili 2 or 3
- Turmeric 2 teaspoon
- Salt 2 teaspoon
- Red chili 1 teaspoon
- Water 4 cups
Method of cooking
step 1
Wash the rice and daal (lentils) and soak them in water for 20 to 30 minutes.

Add ghee (oil) in the pressure cooker and add cumin,bay leaves,cloves,ginger powder,garlic powder,turmeric.saute for 5 minutes on low flame.
Step 3
Add rice and lentils to the cooker and pressure cook for 2 to 3 whistles.open the pressure cooker and mix well.after mixing add red chili,salt and green chili into it.again pressure cook it for 5 minutes. Open the pressure cooker and mix it.after mixing,the rice and daal(lentils) should have broken down and should look slightly creamy.

Serve it with lettuce,tomatoes,cucumber,onions and raita(sauce).
