Pakistan – Traditional Dowdo (Thick Soup With Wheat Noodles and Mustard Leaves) GILGIT SPECIAL

Introduction

Dowdo is one of the famous and delicious soup in Pakistan. This is the specialty of Gilgit Baltistan. Gilgit is not only famous because of its beauty but it is also very famous because of its delicious dishes. Dowdo is a thick creamy soup that has soft wheat noodles in it and it also has boiled mustard leaves which give it a desi look and flavor. This is best to eat this in winter. In winter roadsides are full of this yumminess and most of the restaurants have dowdo in the menu. This is hard to find in Lahore, Karachi, Peshawar, Quetta, and in other places. Lahore has some of the restaurants which have dowdo on the menu.

The wheat noodles are similar to spaghetti but dowdo noodles are thick and soft than spaghetti. Sometimes Dowdo has Boiled vegetables like carrots, potatoes, reddish, capsicum, and many other vegetables. This is known as a cold-weather soup. This includes:

  • thick soup
  • boiled wheat noodles
  • boiled potatoes
  • shredded carrots
  • boiled mustard leaves
  • different spices
  • chicken stock

The soup has a dense consistency, the wheat noodles have a soft and slippery texture, boiled vegetables have a soft texture. You can serve this at parties as an appetizer or enjoy it in the cold knight. The recipe is so simple but the soup is very delicious.

Ingredients for making soup

  • lamb mince 1 kg
  • Water 15 cups
  • tomatoes 2 medium (chopped)
  • onion 1 large (chopped)
  • garlic paste 1 tsp.
  • ginger paste 2 tsp.
  • salt 1 tsp.
  • red chili 1/2 tsp.
  • black pepper 1 tsp.
  • oil 1/2 cup
  • turmeric 1 tsp.

Method of cooking

Step 1

Take a pan and turn the flame medium and add oil, ginger paste, garlic paste, onions and sauté it for 15 minutes. Now add the tomato, mince, and mix well, and then cover the lid for 20 minutes. Now open the lid and give it a stir. Then add salt, red chili, black pepper, turmeric and mix well and then again cover the lid for 15 minutes and then add water and turn the flame low.

Ingredients of making wheat noodles

  • wheat flour 2 cups
  • plain flour 1 cups
  • salt 1 tsp.
  • baking soda 1/2 tsp.
  • water as needed
  • sugar powdered 1 tsp.

Method of cooking

Step 1

Take a large bowl and add wheat flour, plain flour, baking soda and mix well. Now add the sugar and water and combine it to make a dough. Now take a large pot of boiling water and put the noodles in the pot and cook for 15 minutes.

For preparation

Take a bowl and fill half with the soup and then and reasonable amount of noodles in the soup and then add some boiled vegetables on top.
