Pakistan – Mutton Rosh

This dish is the heart of Balochi Cuisine in Pakistan. The meat dish is always loved by every people of Pakistan, whereas consumption of meat is very highly recommended on the festivals like especially on EID, Eid ul Azha, where animals like goat, lamb, cow are scarifies in the morning with the prayer and many of the meat dishes are made and ROSH is among of them.

Balochistan is a province of Pakistan. Every province, every region of Pakistan has its own tradition about clothing, their rituals and even food.
Speciality of balochistan in food is DUM PUKHT and SAJJI. Both dishes are similar somehow with some variations.

Kaleeji is actually liver in English. Masala is a word used for any curry, gravy or broth. By combining these two things we have the name of the dish that is Kaleeji Masala, which means Liver gravy.

Meaning of the word ras malai is comes from two words RAS means syrup or sweet flavor and MALAI means cream. Ras Malai is the most delicious of my sweet Pakistan a few miles away.
