Kuwait – Traditional Spicy Biryani

About the dish
Biryani is the most delicious and famous dish. It is made by adding chicken, spices, and rice together. The rice and chicken go very well together and the spices in it make it more appetizing. The look of the biryani makes you droll and the delicious aroma of it is so good. The texture of the chicken is soft and tender. The texture of the rice is soft and fluffy. The tender chicken and soft rice is the specialty of the dish. The most important thing about the dish is the rice has to soft and fluffy otherwise it will ruin the taste of biryani. Everything has to be perfect. Some people like to eat spicy biryani you can add a little more chili or if you are not of them then you can add a little less chili. Biryani is served with raita (yogurt dip) and salad. All the people in the world love biryani for sure. This is available in all the restaurants in Kuwait and also available at street vendors. You can have this as lunch or dinner. you can also serve this to parties, gatherings, functions as the main course. If you do not like chicken you can replace this with lamb or beef but most people prefer chicken.
Biryani is also very popular in Saudi Arabia, India, Pakistan, Afghanistan, etc. The word biryani came from the Persian language. There are different types of biryani like vegetable biryani, beef biryani, potato biryani, lamb biryani, smokey biryani, hot biryani, tandoori biryani, colorful biryani, and many more. There is another dish named pulao it is very similar to biryani by its look bit by taste. Biryani is made by adding chicken and gravy to boiled rice and then mixed. Pulao is made by adding chicken and chicken sock to boiled rice and then mixed.
History
The origin of this dish is not found yet but It is made with traditional Indian spices. It s said that the first time biryani was cooked in the royal kitchen (Mughals kitchen). Some people said that the dish is from India and some said that it is similar to pulao. In the sixteenth century, it states that the biryani is from India but that is wrong.

Ingredients
- 1 kg chicken
- 1 kg rice
- 2 tbsp red chili
- 1 tsp turmeric
- 1 tbsp salt
- 2 tbsp dry coriander
- 1 tsp cumin powder
- 2 tomatoes (chopped)
- 3 onions (sliced)
- 2 tbsp coriander
- 3 green chilies
- 2 tbsp ginger paste
- 2 tbsp garlic paste
- 8 tbsp oil
- 2 cups yogurt
Cooking
Take a pan and turn the flame on medium heat and add oil, onions, and tomatoes and saute it until the onions are caramelized and tomatoes are fried. Then take a deep cooking pot and add the rice and 1 liter of water in it and bring it to a boil and then cover the lid and boil until the rice is soft and fluffy.
Now take another deep cooking pot and turn the flame medium and then add the onions and tomato mixture in it and then add chicken, yogurt, dry coriander, turmeric, cumin, red chili, and salt. Now mix it until all the things are well combined. Now cover the lid and let it cook for 20 minutes.
Now remove the chicken from the heat and take another deep pot and then add half rice on the bottom and then add the half chicken on top of it and then add the remaining rice and chicken and add coriander and green chili on top of it and then cover for 15 minutes on low flame. Now serve thin with salad and raita.
