Nigeria – Moi-Moi

Moi moi is a nice dish eating in Africa. This is common with the Nigerian people. Unlike koki beans and koki corn in Cameroon, in Nigeria it is Moi moi. This is a very delicious dish that represent culture and tradition. Moi Moi is typically Nigerian. You will hardly find this dish anywhere around the world and if you should see anywhere, be sure the country the person is from Nigeria or Cameroon.

Ingredient

  • Pepper
  • Onions
  • Smoked fish
  • White beans
  • Salt to taste 
  • Maggi
  • Banana leaves 

Procedure

  • Steep the beans in water, overnight. The reason for steeping the beans overnight is to make it easy to skin the beans, and also to economize fuel.
  • After steeping the beans, use a processing machine which is used to pill beans. This machine is designed to pill the skin of beans. When about to peal the beans, put the water just at same level of the beans. 
  • After doing so, using your hands rob the beans together with your hands to make sure you remove the skin of the beans. After doing so, change the water and rinse the beans. 
  • After rinsing several times to remove all loose skins from the beans, put the beans in a blender with a cup of water and blend. You may blend gradually until you finish blending all.
  • Using the smaller compartment of the blender, blend your pepper.
  • Prep your dry fish with your hands by scattering them.
  • Put the beans in a bowl and with oil, mix well together. The oil should just be ok for the beans paste. If too thick, you may use warm water to make it lighter. Steer well. 
  • Add your Maggi, salt to taste, pepper and steer well. Taste to make sure everything is in its right quantity.
  • By this time, the mixture is like that of a cake texture about to be baked.
  • In a deep pot, place your deep leaves. Add warm water into the pot and make sure it’s about an inch, then your beans paste placed in small baking pans, put them in the pot and and cover with fuel papers or plantains leaves. 
  • Cover pot and make sure it is air tide. Allow for about 45-50min.

Note

  • If you don’t have small baking tins you could use, use banana leaves. Rap well and tie with rop and place on the surface of the pot. 
  • Steeping beans before cooking is common in Africa. This steeping helps to reduce cooking duration and fuel wood or gas.
