Somalia – Surbiyaan Hilib Adhi

In Somalia, Eid festival will mostly go with this platter cuisine, the Surbiyaan Hilib Adhi. It is a cuisine of lamb mixed with rice and spices. Rice is cooked half way ready and the lamb roast will be mixed along with rice to fully accomplish the recipe.
Some of the cuisines with rice mix will not always go with lamb, but also chicken like the one in the left picture.
Bariis Iskukaris is the chicken mixed with rice, chicken meat chopped triangularly horizontally to give an ease in cooking. Added with small green peas, yellow peas and green long pepper will make it more taste.
It is among the loved fried rice cuisines in Somalia.
Sometimes not just the mixed fried rice that can do much but also plain fired rice.
From Somali, this cuisine is taken with yellow onion-tomato salad on top of it and it’s normally eaten with a side soup of meat or fried chicken meat. The color of rice is due to some ingredients while cooking it, you may choose to color it as wish.

Ingredients to consider
- 1/2 kg of lamb meat
- 1 kg of basmat rice
- Tomato paste 1 packet.
- 2 onions
- 3 cloves
- 1 teaspoon of ginger
- 1 teaspoon of paprika pepper
- Garlic grinned
- Yogurt
- Cardamon
- Salt
- Oil
- 1 lemon
Cooking steps
- Cut meat into small sizable pieces. Marinate with salt, ginger, lemon (half piece juice) and ginger, fry until ready.
- Take pan to heat, fry onions until brownish, add cardamon (1 teaspoon), tomato paste, salt for taste and paprika pepper, fry and boil for 4 minutes. Add in yogurt(1/2 cup) and keep boil for 2 minutes more.
- Add meat and mix well, add some water for soup, simmer for 10 minutes under moderate heat.
- Soak rice for 25 minutes with water mixed of salt.
- Cook rice to half done. Drain water and put it into the pan with meat stew.
- Mix well and bring to tender cook until rice is ready.
The cooking process may seem long, but try the taste of Surbiyaan Hilib Adhi, it will tell that you should have waited a bit more longer. Enjoy it as much as you can with a group of friends or family.
