Pakistan, India – Traditional Halwa Kaddu Gosht (Pumpkin Pudding with Mutton)

Introduction

Halwa kaddu gosht is a special curry recipe popular in Asian countries. The main components of this dish are Pumpkin and Mutton meat. Traditional dish Hlawa Kaddu Gosht is very rich in nutritional point of view as well as healthy diets. there are many protein in it because the usage of Mutton meat. Many people love this dish because of its nutritional aspects and healthy diets. This dish is very popular in the South Asian region and now it is famous in Pakistani cuisine. This dish is not expensive, but due to the little bit of the cost of mutton meat, it could be expensive, that’s why not every middle-class person can afford this dish. I prepared and wrote a recipe on Halwa Kaddu in a very easy, simple, and quick way that you can copy and make it at your own home in front of your family and guests.

Meaning of Name of Dish

The word Halwa is an Urdu word that means pudding while on the other hand, the word Kaddu is also an Urdu word that means pumpkin. Pumpkin is a vegetable and it is used for making desserts and as well as for curry dishes or gravy dishes which I described above. It is the most common dish in the South Asian region.

Origin and History

When we talk about the origin of Halwa Kaddu Gosht, it is firstly originated and rooted from the Indian Subcontinent. In the time Mughal Empire it is firstly introduced by the chef of the King and the King loves the way that he is cooked this dish. Further, this dish is making a part of the Mughlai Cuisine and then with the passage of time, it becomes popular day-by-day all across Asia. Desi people love desi foods and they make this dish every time. Pumpkin is a type of vegetable that is available in all Asian countries. in India, they introduced Pumpkin with many varieties. there are many changes in this dish with the passage of time, for example, you can make it with chicken, lamb, beef or you can make it simple gravy.

Serving

When we talk about the serving, you can serve it with the hot homemade wheat Chapatti, hot Sourdough chapatti, Boiled rice, etc. People Mainly prefer to eat this dish with hot wheat dough chapatti and even it is most tasteful when the chapatti is made at home.

Ingredients

  • (Clarified butter) 3 tbs
  •  (Onion) sliced 2 medium
  •  (Cumin seeds) 1 tsp
  • Mutton mix boti ½ kg
  • (Ginger garlic paste) 1 & ½ tbs
  • (Cumin powder) ½ tsp
  • Garam masala powder ½ tsp
  • (Black pepper powder) ½ tsp
  • (Coriander powder) 1 tsp
  •  (Salt) 1 tsp or to taste
  • (Red chili powder) 1 tsp or to taste
  •  (Tomatoes) 3 medium
  • Water 2 Cups or as required
  •  (Pumpkin) small cubes 1 kg
  • Water ½ Cup
  • (Green chilies) 3-4
  • (Fresh coriander) chopped

Cooking Method

  • At the start take a medium size wok adds clarified butter of 3 tsp and heats it at medium flame.
  • Then add sliced onion and cumin seeds into the wok and mix it well until onions are translucent.
  • Then add cut pieces of mixed mutton and mix it again until color will change.
  • Then add ginger garlic paste and continue to cook for 1 to 2 minutes approximately.
  • After this add cumin powder, whole spice powder, black pepper powder, coriander powder, salt to taste, and red chili powder to taste into the wok.
  • Continue cooking until all spices will well be combined or mix, or for 1 to 2 minutes.
  • Now add cut pieces of 3 medium tomatoes and again cook for a minute at medium-high flame.
  • Then add 1 cup of water or as required into the wok and continue cooking until the pieces of tomatoes are tinder (3 to 4 minutes approximately).
  • Let’s cover the wok and cook it on medium-low flame until the mutton is soft or approximately for 40 to 45 minutes
  • After uncovering it separate the mutton boti into the bowl and reserve them for later use.

Assembling Process

  • After uncover the wok and once your meat is tender, take it out and reserve it for later use.
  • Now assemble the gravy in the wok and small cubes of pumpkin, and then mix it well.
  • Add half cup of water and mix it again.
  • Let’s again cover the wok and continue cook on medium-low flame until the water dries (approximately for 12 to 15 minutes).
  • Now after uncover it turn the flame off and blend the pumpkins through blender until it forms like a pudding.
  • Then turn the flame on and add reserved prepared mutton pieces into the wok and mix it well.
  • Include 3 to 4 green chilies and cover the wok for simmer cook at low temperature of stove (approximately for 8 to 10 minutes). 
  • Now your dish is about to ready.
  • Dish it out into the bowl and garnished it with chopped fresh coriander leaves.
  • Serve it to your family and your loved ones.
  • Enjoy the meal.
