Pakistan – Chicken Bar B Q Platter

INTRODUCTION TO THE DISH:
This dish is actually a plate of full meal. It included the special types of Kababs made up of chicken, either mutton or beef. This meal has small tikka pieces, a chicken roasted thigh with amazing sauces and salad. This platter is served in many restaurants in Pakistan. Every restaurant has its own components on the platter. The special barbecue or BAR B Q platter have all the favorite things in it.
COMPONENT OF THE PLATTER:
The platter has many components according to the taste of the choice and availability of the items. Following are the food items can included in the platter like :
- Chicken thigh tikka
- Chicken tikka boti
- Chicken malai boti

This is actually a whole meal platter, so in Pakistan it is served with bread/ roti and rice like:

- Roghani naan
- Butter naan

- Pulao
- Biryani
- Zeera rice
- Simple rice
- Boiled rice etc

BARBECUE TECHNIQUE:
This is the technique of cooking food on coal with the help of smoke. Barbecue technique follows the roasting, grilling and smoking of the meat, either vegetables. In this cooking method, we have to marinate our meat with the special ingredients like dried spices, yogurt and some sort of lemon etc. Than heat up the coal, until they get red hot and than after skewering up the meat into the barbecue sticks, cook them on it. We required barbecue setup for doing this amazing fun cooking. Like barbecue grill, coal, skewers etc.

- Preparation time : 45 minutes
- Cooking time : 1 hour
- Total time : 1 hour and 45 minutes

INGREDIENTS FOR CHICKEN MALAI BOTI:
- Chicken : 1/2 kilogram (cut into small pieces )
- cream : 1 cup
- Yogurt : 1 cup
- Salt : 1 tsp
- White pepper : 1 tbsp
- Green chilies : 2 tbsp
- Mayonnaise : 1/2 cup
- Garlic paste : 2 tbsp
- Ginger paste : 2 tbsp
MARINATION OF CHICKEN:
Add all the things together in a bowl and mix well. After mixing properly, let it set for 2 hours.
INGREDIENTS FOR CHICKEN THIGH TANDOORI:
- Chicken thigh : 2 pieces
- Garlic paste : 2 tbsp
- Ginger paste : 2 tbsp
- Vinegar : 4 tbsp
- Yogurt : 1 cup
- Salt : 1 tbsp
- Red pepper powder : 1 tbsp
- Cumin powder : 1 tbsp
- Paprika powder : 1 tbsp
- Lemon juice : 2 tbsp
- Turmeric powder : 1 tsp
MARINATION OF CHICKEN TANDOORI:
Take chicken thigh and line cuts on the top of the meat to get infused with the spices. Now make mixture of all the ingredients dried and wet and make the paste. Now coat this paste over the chicken thigh and let it marinate for 2 hours.
INGREDIENTS FOR CHICKEN TIKKA:
- Chicken small pieces : 1 kilogram
- Onion paste : 4 tbsp
- Garlic paste : 2 tbsp
- Ginger paste : 4 tbsp
- green chilies : 4 tbsp
- yogurt : 1cup
- Tandoori masala : 4 tbsp
- Salt : 1 tsp
- Red pepper : 2 tbsp
- Cumin powder : 2 tbsp
- Coriander powder : 2tbsp
- Turmeric powder : 1 tsp
MARINATION OF CHICKEN TIKKA:
Add all the ingredients into the bowl and mixed it well. Now let it set for 2 hours for proper marination .
BARBECUING TECHNIQUE:
- Now take the barbecue grill and add coal on it.
- Turn on the stove and heat up the coal until they get red hot.
- Now take skewers and skew the marinated malai boti, chicken tandoori and chicken tikka over it.
- Now put the skewers on the heated coal and let it cook for 5 minutes on a side.
- Now apply butter / oil on the cooking chicken so nice color appeared on it.
- When cooked served it on a platter with raita and butter naan
