Hong Kong (China) – Biangbiang Noodles

The very first thing that we have to know about our dish ” BIANGBIANG NOODLES “ is its meaning and what type of dish this is. Biangbiang is the ” hand-pulled noodles “ which is very famous all around Hong Kong or China. Its shape is very different from all other noodles. It is very broad and thick, its taste is very delicious. Its shape is like the belt and its thickness and length also. Its special thing is that it is hand-made noodles, these are made by humans, not by machines. It is firstly made by the poor man in the Shaanxi. This dish is famous and mostly eaten in winters by adding some hot sauces over it and serve in the festivals of winters especially.

This is famous due to their hand-made noodles.

This type of noodles is famous all around the world but most people didn’t know about it but in Hong Kong, this is famous due to their originality and they prefer food over their struggle.

There are “ Eight strange wonders of Shaanxi “ and these noodles are one of them, that is why their importance is too much in Shaanxi and Hong Kong.

WHAT IS HAND PULLED NOODLES?

Hand-pulled noodles are long, think and broad noodles which are made by human. They are hand-made noodles that’s why they are very special. Hand-pulled noodles are made from Wheat flour, when we made a dough of wheat flour by kneading it gives a very silky smooth texture to noodles.

HOW TO MAKE DOUGH

We just need three ingredients for making this dough

  • Wheat flour
  • salt
  • water
  • oil

We have to keep it in our mind that the main thing about dough is its resting so that it can be swell and give you the best texture of noodles.

The first thing is to rest dough when you knead it, you have to knead it about 5 times between the rest of 15 minutes of each kneading step. It is not too much effort but if you want the smooth silky texture of your noodles then you have to do it.

The next time when dough takes rest when you divide them or cut them into small stuff and put oil on them and then leave them for about 50 minutes.

HOW MUCH TIME DOUGH TAKE?

Dough take almost 5 to 6 hours of rest so it can be stretchy and soft in texture.

For Noodles

  • Flour
  • salt
  • oil

For biangbiang

  • hand-pulled noodles
  • oil
  • salt
  • pepper
  • garlic
  • ginger
  • red chili powder
  • red chili sauce
  • soy sauce
  • vinegar
  • corn
  • Chinese cheese
  • cabbage
  • carrot

METHOD

  • Take noodles and boiled them in the water so they can be soft and silky.
  • Apply all the spices over it.
  • add soy sauce and chili sauce to the top of the noodles.
  • fry all the vegetables.
  • Add sauces and vegetables to the noodles.
  • serve it with sauce.
