Sudan – Moukhbaza with Kisra Bread

Sudan is a country found East-central of Africa bordered by Egypt to the north, Ethiopia to the east, South Sudan to the south and Chad to the west. Although Sudanese cuisines are influenced from it’s neighbor’s ones, still it holds Moukhbaza as itt’s significant dish prepared almost all over the country.
Moukhbaza is a dish made from mashed ripe bananas and lemon mix, served with chilies on top. This dish is normally served with other dishes as the one we will prepare here, Kisra bread.
Kisra bread is known all over the country because it is a plain bread served over all other foods. It acts as a layer just after plate layer. It also consumes along with the food served on.
It is prepared by maxing water, sorghum flour and wheat flour to give a thick texture that is fried shortly to give flat plain-like bread.
Let us prepare this simple yet very taste cuisine from Sudan.
Ingredients
- 3 ripe bananas
- 1/4 sorghum flour
- wheat flour (a quarter a cup)
- 3 hot chilies peppers
- salt
- 1 lemon
- water
- oil
- cow oil (fat)
Procedures
Preparation of Kisra do take long up to a day. Here is the list to follow;
- Mix 1 cup water and sorghum flour, let it settle for whole night. (at least 12 hours)
- On the next day mix with wheat flour and 1 and 1/2 cup of water to form batter.
- Heat up the frying pan, using cow oil (rendered fat from cow brain) or any favored oil and grease it.
- Pour some batter and spread the batter to fit the pan angles using a card or any like.
- Once Kisra angles bend inward remove it into clean plate. (process may take around 1 minute)
- Repeat frying all the batter, keep Kisra warm until Moukhbaza prepared.
Moukhbaza preparation uses less than ten minutes. (when all things are ready)
- Mash the peeled ripe bananas into a bowl and add lemon juice.
- Chop the peppers into tiny pieces, dry them either using oven or sunlight.
- Beat until well mashed.
- Take each share and serve on a plate, pour chilies on top.
